How to Make Grilled Lemon Herb Chicken: A Quick and Flavourful Weeknight Dinner
Ingredients:
-
4 boneless, skinless chicken breasts
-
3 tablespoons olive oil
-
Juice of 1 large lemon (about 3 tablespoons)
-
3 garlic cloves, minced
-
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
-
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
-
2 tablespoons fresh parsley, chopped
-
1 teaspoon salt
-
½ teaspoon black pepper
Instructions:
-
In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and pepper.
-
Add the chicken breasts to the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
-
Preheat your grill to medium heat.
-
Grill the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.
-
Remove from the grill and let rest for a few minutes before serving.
Serve your grilled lemon herb chicken with roasted vegetables, a fresh salad, or whole grains for a complete, healthy meal.
