How to Make Grilled Lemon Herb Chicken: A Quick and Flavourful Weeknight Dinner

If you’re craving a simple, healthy, and delicious dinner, this Grilled Lemon Herb Chicken is just what you need. Juicy, tender chicken breasts are marinated in a zesty blend of fresh lemon juice, garlic, and aromatic herbs like rosemary, thyme, and parsley. The marinade infuses the chicken with bright, refreshing flavours that make every bite a delight.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 3 tablespoons olive oil

  • Juice of 1 large lemon (about 3 tablespoons)

  • 3 garlic cloves, minced

  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)

  • 2 tablespoons fresh parsley, chopped

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and pepper.

  2. Add the chicken breasts to the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

  3. Preheat your grill to medium heat.

  4. Grill the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.

  5. Remove from the grill and let rest for a few minutes before serving.

Serve your grilled lemon herb chicken with roasted vegetables, a fresh salad, or whole grains for a complete, healthy meal.
